Marufuji Winery "Rubaiyat Koshu Sur Lie" 2023

Rubaiyat Koshu Sur Lie is a dry white wine made entirely from Koshu, aged on its lees in a method Marufuji pioneered for the variety long before it became common practice. It opens with lemon rind and pineapple over white flowers, a clear note of fresh bread beneath, then moves to a palate of lemon, lime, green apple, and pear.

Best served at 7–10 °C, medium in body and held together by an even line of acidity, this wine remains the benchmark for what Koshu can be.
